Olive Oil 2 medium zucchini cubed 1 large eggplant, peeled and cubed 2 large green bell peppers cut into small pieces 1 med carrot, peeled and cut into small pieces 3 med onions chopped 1 whole head of garlic, peeled and crushed salt and pepper as desired 2 cups water 2 cups stewed tomatoes 1 Tbs dried basil or fresh equivalent A basic and delicious vegetarian dish. . One can add different seasonings as desired. Heat oil in heavy duty pan and cook and stir for several minutes all ingredients except tomatoes and basil. Then cover and cook medium low heat for 45 minutes. Stir in tomatoes and simmer uncovered 15 more minutes. Stir in basil. Adjust seasoning to taste. Yield 8 servings. Serve with rice or couscous.
