Dip trout fillets in milk. Dredge fillets in cracker crumb mixture. Pan fry fillets, a few at a time, in hot oil in a large heavy skillet 3 minutes on each side or until golden. Drain on paper towels. Garnish, if desired, with fresh thyme sprigs.

2/3 cup saltine cracker crumbs
1/3 cup ground almonds

2 pounds
trout fillets
1/2 cup
milk
2/3 cup vegetable oil
