Amok - Cambodia Ingredients Mudfish, lemon grass, kjiey (color beige), romiet (color orange), garlic, dried chilli, salt, fish sauce, 'smiling orange' leaf or its peeled skin (fr. the fruit), 'nhior' leaf, extracted coconut milk, fermented fish (prahok). Preparation Slice mudfish into thin pieces(bones out.) Grind combination of: lemon grass, kjiey, romiet, garlic, dried chilli, salt. Put this mixture onto mudfish. Add some coconut milk to it. Grind small amount of fermented fish. Mix everything up. Add some fish sauce. Stir evenly, bring it to homogneous structure. Fold banana leaf to form small container using wooden pin. Cut 'nhior' leaf into small pieces and place them on bottom of container. Pour the whole thing into the container, steam it for about 15 mns or so. Ready to serve! Note: Mudfish (frozen), kjiey, romiet, 'smiling orange' leaf can be found in Asian grocery store. But 'nhior' leaf, banana leaf are impossible to find in the States. Forget them, I guess(no choice!) Therefore, in the last paragraph, make small container out of aluminum foil and use it as such. Cover it with some plastic sheet prior to steam.

Ingredients

Mudfish,
