Anti-Vampire Pizza (dead easy too!) Base : any pizza base your heart desires. Sauce : raw garlic cloves, crushed or chopped, add enough olive oil to cover the garlic pieces. I usually snip in some fresh basil leaves and add a dash of Italian seasoning. Depending on your taste (and nutritional inclinations!), you can massage, drizzle or pour the oil onto the base, making sure you have a decent amount of garlic distributed on the crust. I usually end up using at least 3 cloves for a 10" pizza. Top with toppings of choice, and as much or as little mozzarella cheese as you like. Topping Variations : 1. Vegetarian For a 10" pizza, slice up 10 mushrooms and a medium-sized onion. Saute onions until limp, add mushrooms and cook until onions are golden. (For a double whammy, I used olive oil in which chopped garlic had been sitting for a day, and also added a clove of minced garlic to the saute mixture. A little nugget of garlic or herb butter will also add extra flavour, but that's optional.) Season to taste with a teaspoon (or more!) of lime or lemon juice, and pepper. 2. Garlicky Shrimp Both fresh and cooked shrimp are fine for this. As for the veggie pizza, saute an onion and a clove of garlic. Chuck the peeled shrimp in halfway if you're using the raw stuff, if not, add cooked shrimp when the onion/garlic mixture is golden. Whack them around so they are well coated. Adding some rosemary, basil and/or a dash of Italian seasoning is also nice. ~
