from New York, USA Applesauce Fruitcake 2 cups sugar 1 cup shortening 1 tsp salt 4 tsp baking soda 2 large eggs 3 1/2 cups applesauce 1 tsp each: cinnamon, nutmeg, cloves 3 tsp baking cocoa 4 cups flour 2 cups raisins 1 cup chopped nuts 1 lb. candied fruit Beat first 5 ingrdients until light and fluffy.Heat applesauce to near boiling.Add first mixture and mix well.Add cocoa and spices and mix well.Add flour, raisins, nuts and fruit. Mix well. Pour into greased and floured pans or greased waxpaper line pans.Bake 350F about 45 to 60 min OR tested done.Yield: 2 large loaves.
