4, 6 oz fish fillets ( Ex halibut or similar mild sweet fleshed fish ) 18 oz jar of apricot preserves 2 cloves garlic minced 2 Tbs grated orange zest 2 Tbs chopped fresh rosemary salt and pepper to taste These flavors blend nicely for a healthy, low fat fish dish. Preheat oven to 350F. Spray baking dish with cooking spray. Place fillets in baking pan. In small saucepan heat preserves, garlic, zest, rosemary and salt and pepper until heated. Pour over fish. Bake fish 15 to 20 minutes or until fish flakes easily with a fork. Spoon sauce over the fish. Serve over cooked brown rice or whole wheat pasta.
