4 cups baby mixed greens OR 1/2 head of iceberg lettuce sliced/shredded 1 head radicchio, sliced/shredded with knife 3 Asian Pear apples chopped into bite size pieces Dressing: 1/4 cup olive oil 2 tsp Dijon mustard 1 tsp sugar or to taste 1 Tbs red wine vinegar or to taste Crumbled feta or crumbled blue cheese as desired salt and pepper to taste Optional Garnish: toasted or candied nuts of choice as desired My brother grows these wonderful fruits but nobody in his family cares for them ( pear taste but crunchy like an apple ). So when I went to visit my mom she passed on to me a bunch that my brother gave her. This recipe I enjoyed was found on the Net and I adapted it to my liking. Guests also enjoyed it and now I will gladly accept any Asian pears that come my way ! Into a bowl, place all the lettuce and Asian pear apples. Combine dressing and toss into lettuce. Add as much crumbled cheese as desired and toss well again. Season with some salt and fresh grated black pepper. Top with nuts if using as a garnish Yield 6 to 8 servings. Note: I liked the color combo of the green ice berg lettuce and radicchio together
