1 salmon filet about 1 1/2 to 2 lbs salt and pepper to taste Extra virgin olive oil 1 small to medium sweet white onion, chopped 1 large red ripe tomato, coarse diced Fresh Basil OR Mint leaves chopped as desired Fresh lettuce leaves coarse chopped Dressing: 4 tablespoons fish sauce 4 tablespoons lime juice 2 teaspoons brown sugar 2 to 3 hot Asian chilies, chopped- or as desired May be served warm or room temperature. Drizzle salmon with oil, season and bake salmon in a 400F oven about 20 minutes or done and fully cooked. Cool. Mix dressing and set aside. When salmon is cool, remove any skin and coarse chunk or cube and place in salad bowl. Drizzle salmon with dressing, add onion and tomatoes and some fresh chopped mint leaves to taste. Toss lightly and place on bed of chopped lettuce. Garnish with extra mint or basil. Serves 4 to 6.
