This is not a Passover recipe, just the chef's desire to create a delicious appetizer. Chef Halls' recipe uses 18 eggs, matzo meal, dill, lard , seltzer water and baking powder to get the fluffy consistency he wants. The cooked matzo balls are then wrapped in bacon and oven baked till the bacon is crispy. The fat then oozes into the matzo balls, making for a delicious appetizer. His restaurant patrons love the recipe! On blogs, there is discussion to make the appetizer Passover friendly, using traditional matzo ball recipes and turkey bacon. Prepare your favorite matzo ball recipe. Chill mixture well, roll into small balls, cook as you would do for matzo balls in boiling water or chicken broth Wrap the cooked, cooled drained matzo balls in a half-slice of apple wood-smoked bacon. Roast in oven at 400 degrees until crispy. Serve the bacon wrapped balls with shaved fresh horseradish and mayonnaise.
