BAKED GRITS WITH CHEESE by Lei Gui 1 cup hominy grits 2 cups milk 1 egg, slightly beaten 4 tablespoons butter 1 tablespoons sugar salt to taste 1/4 teaspoon ground white pepper boiling water 4 oz of shredded cheddar or what ever shredded or cubed cheese you like, I have used mozzarella, american, low fat swiss and cream cheese. In the top of a double boiler, Bring 1 1/2 cups salted water to a boil over direct heat. Stir in the grits and boil for about 2 minutes. Place over hot water and cook until thick. Stir in 1 cup milk and cook for 1 hour. Add the remaining milk, eggs and butter and sugar. stir in shredded cheddar. Pour into greased casserole and bake at 350 deg.F. for about 30 to 45 minutes. serves 6 note: I have added chopped up left over meat and sausages to this. Just add it in with the cheese. Enjoy, Lei
