My family likes this one. BAKED SPARERIBS AND SAUERKRAUT WITH DUMPLINGS orginal source:Pennsylvania Dutch Cooking spareribs ground pepper(optional) ground nutmeg (optional) sauerkraut ( used plastic bagged variety in refridgerator section) For Dumplings: 2 cups flour 1 egg beaten 1 teaspoon baking powder 1 cup milk Sprinkle spareribs with ground pepper and nutmeg and place in the bottom of roasting pan. Add the sauerkraut and a little liquid.Cover well and refridgerate overnight. Cover and bake in a moderate oven 350degs 1-1 1/2 hrs. Make dumplings by combining four,baking powder, milk and egg. Drop by spoonfuls on sauerkraut, cover tightly and bake for 20 minutes. NOTE: Instead of dumplings, when I am in a hurry I use potatoes, skinned, rubbed with oil or butter and then baked or laid on top of the sauerkraut and baste at least twice during cooking or serve with boiled or mashed potatoes.Or I put refridgerator biscuits or dinner rolls on top and bake for recommended time. leig@aol.com(Lei Gui) http://www.geocities.com/Heartland/Meadows/3658
