from Australia Baked Squash Casserole 1 lb. hamburger 1 small bell pepper, chopped 1 medium onion, chopped 1 stem celery, chopped 1 small clove garlic, chopped 5 or 6 large yellow squash, chopped (may use 3 white or mix the squash) 1/2 tsp. chili powder salt and pepper to taste Steam squash in only enough water to keep squash from sticking to pan. Squash provides own water. Cook until tender. Cook meat until nearly brown; add pepper, onion, celery and garlic. Cook until pepper and onion are done, but not brown. Pour over steamed squash. Add chili powder, salt and pepper. Put in casserole dish and bake until slightly brown on top, probably at 350F. Cooked eggplant may be substituted for the squash or eggplant and squash may be mixed for a very flavorful casserole. Variation: Omit chili powder. Add sage, 1 cup uncooked rice, 1 can chicken mushroom soup and 1 cup grated cheese.
