BAVAROISE FRUTILLAS ( Strawberry snow) Chile source:Women's Day International cook book serves 8 2 envelopes unflavored gelatin 1/3 cup cold water 1/3 cup boiling water 2 cups strawberry or raspberries, crushed, or 2 packages(10oz each) frozen berries (reserve several for garnish) 3/4 cup sugar 2 tablespoons water 4 egg white, beaten until stiff but not dry Soak gelatin in 1/3 cup cold water, then dissolve in boiling water. Add crushed strawberries. Chill until mixture begins to jell. Cook sugar and 2 tablespoons water in a small heavy saucepan until a few drops form a soft ball in cold water. Remove from heat and gradually add to egg whites, beating constantly. Continue beating gently until cool. Combine eggwhite mixture and strawberry mixture and turn into a 1 1/2 quart mold. Chill until set. To serve, unmold on a platter and surround with a garnish of strawberries. Lei Gui Bronx,NY
