from Ottawa, Canada Beef Bake 2tbsp vegetable oil 1 medium cooking onion chopped 1 clove garlic minced 1 pound lean ground beef 1/2tsp ground coriander 1/4tsp ground ginger 2 medium sized tomatoes chopped 1tsp light brown sugar 2tbsp minced fresh parsley or 1tbsp dry 1/2tsp salt 1/8tsp pepper 1 green or red pepper 1. Preheat oven to 375f, Heat oil in a skillet over moderate heat. Add onion and garlic. Cook uncovered 5 min. Push to one side and add beef. Stirr occasionally until browned. 2. Mix coriander, ginger, tomatoes, brown sugar, parsley, salt, pepper, and peppers in a bowl. Add to beef. Mix well and transfer to ungreased 1 quart cassarole dish. Bake uncovered 20 minutes. Serve over rice. This recipe is one of my favourites. It is also wonderful made with ground turkey or chicken. It is also really good if you add some grated cheese to the top in the last 5 minutes of cooking. I don't remember where this recipe came from. I have had it for years in my recipe box. Beef Bake
