Hi everyone! This recipe is another great one pot meal--serve with salad and ice cream for dessert and you're ready to eat!! BEEF AND CORN PIE 2 pounds ground beef 1 medium onion, chopped 1 green pepper, seeded, halved and diced 1 can (1 pound, 13 ounces) crushed tomatoes 2 cups frozen whole-kernel corn 2 tsp salt 1/2 tsp black pepper 1/4 tsp garlic powder 1/2 cup all purpose flour 1/2 cup yellow cornmeal 2 tsp baking powder 2 tsp sugar 1/2 tsp salt 1 egg 3/4 cup milk Shape beef into a large patty in a large skillet; brown for 5 minutes on one side and cut into quarters. Turn; brown 5 minutes on second side; remove to paper towels. Pour off all but 2 tbs pan drippings; add onion and green pepper to drippings in skillet and cook til lightly browned. Add the tomatoes, corn, the 2 tsp salt, pepper and garlic powder. Bring to a boil; simmer for 10 minutes. Crumble meat into the mixture. Pour into a casserole dish. Mix together flour, cornmeal, baking powder, sugar and 1/2 tsp salt in small mixing bowl; add egg and milk. Stir until smooth. Pour over the top of the meat mixture. Bake in 400 degree oven for 30-35 minutes or until top is golden brown. Julie Michigan, USA

Good,quick,basic.and easy. All I would do to improve or adjust to my taste would be to add chili powder and cumin to the meat mixture and perhaps some black beans and not brown the green pepper, oh well I guess it's a whole new recipe or is it? Thanks, T.
