from New York, USA Black Bean Salad 1 15 ounce can black beans, rinsed and drained (in the northeast, Goya is the best brand) 2 eaqrs worth of corn kernals, blanhed in boiling water for 30 seconds 2 jalepeno peppers, diced, seeded or not, as desired 2 plum tomatoes, seeded and diced 1/2 cup diced red onion 2 cloves garlic, minced 1/4 cup minced fresh cilantro Juice of 1 lime Olive or peanut oil to taste 2 tsp. southwest seasoning mix several dashes of Jalepeno sauce Salt and pepper to taste Mix together the first seven ingredients Whisk together the second four ingredients and toss with bean mixture. Chill. Salt and pepper to taste Makes 4 good sized salad servings NOTE: Mix this half and half with rice and you've got a great vegetarian meal.

Black Bean Salad

1 15 ounce can
black beans, rinsed and drained (in the northeast, Goya is the best brand)
2 eaqrs worth of

Juice of 1
lime
Olive or
peanut oil to taste
2 tsp. southwest
seasoning mix
several dashes of Jalepeno
sauce

Salt and pepper to taste

Mix together the first seven ingredients

Whisk together the second four ingredients and toss with bean mixture. Chill.

Salt and pepper to taste

Makes 4 good sized salad servings
