from NY, USA 1 pkg, 1 lb. frozen black eye peas 2 cups water or broth ( chicken or beef ) 1 large onion chopped 1 clove of garlic smashed 1/4 cup Baco's ( soy bacon tasting product ) or to taste OR a real meat bone, bacon or sausage- see recipe below salt, black pepper to taste soy sauce to taste chopped parsley to garnish Place frozen peas in sauce pot with chopped onion, garlic, broth , Baco's and seasonings. Bring to boil then cover and simmer about 30 minutes or until beans are tender. Remove from heat covered and let beans absorb any excess liquid. Serves 6. Note: typically a ham hock, bacon, sausage etc is simmered with the beans to add to the flavor. Turkey sausage is a good substitute for those who don't eat pork products. Omit any meat for vegetarian recipe.
