BLUEBERRY BREAD PUDDING WITH CARAMEL SAUCE Souce: Egg Beaters serves 9 2 cups skim milk 8 oz container Egg Beaters or similiar Substitute eggs 2/3 cup sugar 1 teaspoon vanilla extract 1/4 teaspoon ground cinnamon 8 slices bread or any bread cubed or broken into small pieces to make 4 cups 1 cup fresh or frozen blueberries Caramel sauce (recipe follows) In Large bowl, blend together milk, Egg Beaters, sugar, vanilla and cinnamon. Set aside. Place Bread cubes in botton of light greased 8 x 8 x 2 inch baking dish. Sprinkle with blueberries. Pour egg mixture evenly over bread mixture. Let sit for at least a half hour. Set dish in a pan filled with 1 inch depth hot water. Bake at 350 degF for 1 hour or until set. Serve warm with caramel sauce Caramel Sauce: In small saucepan, over low heat, heat 1/4 cup skim milk and 14 vanilla caramels until caramels are melted, stirring frequently.
