Blueberry cheesecake crust: 1 3/4 cup graham wafer crumbs 1/2 cup melted butter 1/2 tsp cinnamon 1/4 cup chopped nuts filling: 2 eggs 1/2 cup sugar 1 1/2 cups sour cream 8 oz cream cheese 1 tsp vanilla topping: 2 cups frozen berries 1/2 cup sugar plus 1 tbsp. sugar 4 tsp cornstarch if desired..whipped cream for serving Prepare crust by combining all ingredients. Press in springform pan. Prepare filling by blend altogether until smooth. Pour over crust and bake at 350 for 50-60 min. Then turn off heat and leave in oven to cool. Dont worry about not feeling done at first..it will finish cooking when oven is turned off. I normally leave it for about another hour or go to bed and leave it overnight. Prepare topping by combining ingredients in pot and cooking until thickened..stirring occasionally. Then put in refrigerator to cool..(normally I prepare this while cake is in oven and both can cool overnight)...then pour over cooled cake...You can top with whipped cream if desired before serving. I've done this recipe with several toppings.. strawberries..raspberries..blueberries...I just alternate the crust with or without the nuts/cinnamon to suite the topping. It is the best cheesecake recipe I've found for berry toppings. Liz Stanford Newfoundland Canada
