1 green onion, chopped 2 T. grated ginger 1 T. light soy sauce 1 T. sesame paste (tahini) 1 T. vinegar (rice is best) 1/2 T. sugar 1/2 t. salt 1/2 t. dark sesame oil (NOT the light kind) 2 T. peanut oil 1 lb. boneless chicken, cut into small chunks or slivers 2 T. peanut oil cayenne pepper, to taste (start with 1/2 t., I'd think) cilantro to garnish (optional) Mix onion, ginger, soy sauce, sesame paste, vinegar, sugar, salt, and sesame oil. Heat peanut oil until hot. Remove from heat. Stir in cayenne pepper and stir. Add sesame/soy mixture. Stir well, then taste. Add more cayenne if you want it spicier. Put chicken on a serving platter and pour on the sauce. Garnish with Chinese parsley, if desired
