This was very well received! While potatoes are cooking, mash cheese in the bowl and add about a cup of mayonnaise and mix well. Add some olive oil , Dijon mustard, and heated chicken broth and mix until dressing is creamy. Drain potatoes and when warm, peel and slice and add to dressing and mix well until potatoes are covered with dressing and add herbs and onions and mix well. Depending on how many potatoes one uses, add enough mayonnaise etc. Serve warm or well chilled. When chilled, the mixtures blend even better. Serves 10.
