Bread and Butter Pudding Quantities stated are approximate, and guessed from experience. Just use the ingredients as needed. 1/2 loaf sliced bread 4 oz butter (approx) 4 oz sugar (approx) Raisins 2 pints milk 2 Eggs Nutmeg to taste Spread the bread with butter on both sides. Line the inside of a large ovenproof dish with buttered bread. Cover with a sprinkling of sugar and a sprinkling of raisins, and then another layer of buttered bread. Repeat until the dish is full (or until you think there is enough). Heat 1 pint of milk until it is hand-hot, and mix in the eggs. Pour this mixture over the bread, and top up with cold milk until the bread is just covered. Sprinkle a final layer of sugar and (if desired) nutmeg on the top. If possible, leave to stand for at least 1/2 hour, so the milk soaks into the bread. Cook for 1.5 hours at Gas Mark 4 / 170'C / 340'F. Submitted by Steve Lee , Robinson College, Cambridge, England.
