from NY, US 1 cup brown rice rinsed 1 qt milk 1 cup evaporated milk 1 tsp vanilla 1 tsp cinnamon 1 egg 1/3 cup honey 2 to 3 Tbs rum or Kahula 1/4 cup slivered almonds toasted 1 cup raisins 1/4 tsp nutmeg Brown rice does make a nice rice pudding too. For a light version one may use skim milk and egg substitute. Combine rice, milks, vanilla and cinnamon in a saucepan. Bring to boil and reduce heat to simmer and cook uncovered 1 hour, stir occasionally. In a bowl mix honey and liquor and egg. Add to rice and then add raisins and almonds. Cook and stir another 20 minutes or till thickened. Top with nutmeg. Serve warm or chilled . Serves 6 to 8.
