from NY, USA 1 medium eggplant peeled 2 large tomatoes 1 large Red bell pepper 1 small red onion 2 Tbs. fresh chopped parsley 1 small bunch of fresh basil 1 large garlic clove chopped Optional veges: mushrooms zucchini or yellow squash In a microwave dish add a few Tbs water with the coarse chopped vegetables ( except parsley and basil ) and cook covered 10 minutes or until fork tender. Do not over cook. Drain very well. One may also steam the veges on the stove top. Let cool. Then place in food processor and pulse cooked vegetables and herbs until all are coarse chopped yet the vegetables separate colors remain- ( and the mixture is not a puree or a paste ). Now season to taste with vinegar ( may be white, or red wine or balsamic ) , sugar, salt , pepper and extra virgin olive oil so mixture tastes piquant. Serve warm or chilled. Serves 8 or more.
