from NY, USA 2 1/2 cup cake flour 1 cup sugar 1 tsp salt 3 tsp baking powder 1/3 cup oil 1 cup milk divided 2 tsp vanilla or coconut extract 2 egg separated 1/2 cup sugar 1 1/2 cup flaked coconut Sift flour, baking powder and salt. Make a well in center and add oil, 1/2 cup milk and flavor extract. Beat to blend about 1 minute. Beat in remaining milk and egg yolks. Beat whites until soft peaks and gradually beat in 1/2 cup sugar. Fold into batter. Place into muffin cups ( paper ) Sprinkle coconut over batter. Bake 400F about 15 minutes or tested done.
