home > recipes > appetizers > cole slaw with champagne vinegar dressing
1 small head of green cabbage, sliced thinly ( remove core ) 1 large sweet carrot shredded Dressing: 1 cup quality mayonnaise 2 Tbs sour cream 1 to 2 tsp champagne vinegar ( found at supermarkets or gourmet stores) or to taste 1 to 2 tsp granulated sugar or to taste salt and pepper to taste Tired of supermarket variety cole slaw, you may want to try this instead. Combine cabbage and carrots. Mix dressing separately. Blend dressing very well into vegetable mixture. Adjust seasonings as desired. Serve at once or refrigerate until needed. Tangy, not overly sweet, best served fresh when cabbage is crisp but still wonderful the following day. We enjoy it and you do as well. Yield: 6 to 8 servings. Increase dressing ratio for larger head of cabbage/carrots. I have also madethis with some sweet white minced onion, too.

Have made this recipe a few time and each time it taste better. It is simple to make and full of exciting flavors. I make it a few hours in advance so it can chill. It also lasts a day or two in the fridge. I use the cabbage with carrots etc that is already shredded. Try this and you too will think it is better than any store bought Coleslaw and less expensive. If your store does not have the champagne vinegar, you can find it on Amazon or Swanson Via sites. Enjoy.
