Hi Y'all, Since there are plenty of fresh emu eggs available this season, I submit the following: (Yum!) Deviled Emu Egg: Take one medium to large emu egg and boil for 1 hour and 10 minutes. Take the handle of a heavy kitchen knife, (A crab mallet works well also) and carefully crack the entire outside of the shell and peel carefully away. The egg white is fairly delicate so care must be taken to get it intact. Slice egg vertically and carefully remove the yolk to a mixing bowl. Lay one half of the egg as a center piece and cut the other white half into one inch squares and arrange around the intact half white on a decorative plate. Mash the yolk with a fork. Add: 1/2 cup Mayonnaise 1 tbs. ketchup or chili sauce if you want some extra spice, 1 tbs. Worcestershire sauce 1/4 cup india relish dash of salt dash of white pepper Mix all ingredients until reasonably smooth and spoon into a ziplock sandwich bag. Cut one corner off of the sandwich bag and pipe the contents onto the eggwhite peices and fill the center intact white. Garnish the big one with a sprig of parsley and prepare to surprise the party guests! Emu egg is a bit richer than chicken egg and is delicious IMHO! Invented by Paul Tessmer Submitted by Katra

Egg:
