from US Prep time: About 20 minutes Makes: 4 to 6 servings 1 loaf (1lb) French Bread 1 tablespoon mayonnaise    Lettuce leaves, rinsed and crisped 1 medium size red onion (about 6oz), thinly sliced 1 small cucumber (about 7oz), peeled and thinly sliced 3 tablespoons red wine or Balsamic vinegar 1 tablespoon olive oil 1 tablespoon Dijon mustard 8 ounces sliced Swiss or Jarlsberg cheese 8 ounces thinly sliced Black Forrest or baked ham ½ cup peeled roassted red and yellow peppers, drained Cut bread in half lengthwise; place cut sides up. Spread bottom half with mayonnaise, then add a layer of lettuce. Add layers of tomato, onion, and cucumber. In a small bowl, combine vinegar, olive oil, and mustard; mix well. Drizzle a third of the vinaigrette over vegetables. Then add a layer each of cheese and ham; drizzle with another third of the vinaigrette, then top witih roasted peppers. Drizzle remaining vinaigrette on cut side of top of loaf. Gently press top half over filling. Slice into 4 to 6 pieces. Per serving: 480 calories, 38% (182 cal) from fat; 27g protein; 20g fat; (8.8g sat.), 47g carbo; (3.1g fiber); 1,324mg sodium; 39mg cholesterol. Enjoy!
