from US 2 lbs boneless chicken 1 each grean, yellow & red bell pepper, sliced 1 onion, chopped 2 tablespoons olive oil 2 tablespoons lime juice 2 tablespoons lemon juice 1 cup canola oil 1 cup white wine 1/2 cup slice red onion 1/4 cup chopped cilantro 2 tablespoons green chiles, diced 2 cloves gaarlic, chopped 1 red jalapeno, minced (optional) 1 teaspoon salt 1 teaspoon pepper 1 teaspoon paprika 1 teaspoon cayenne 1 teaspoon cumin 12 tortillas, warmed Mix all ingredients from lime juice to cumin for marinade. cut chicken into strips. Marinade in fridge 4 to 8 hours. Saute peppers and onion in olive oil. When onion is translucent, remove vegetables. Add chicken and saute. Return vegetables to pan when chicken is cooked. Heat through. Divide between tortillas and serve with your favorite salsa, guacamole, and cheese. Serves 6.
