from Yardley, PA I made this last week. It's very easy and simple to make, although it's not intended for those who are watching their fat intake. The mascarpone sends this one through the roof but it's worth it! Five Berry Parfait (serves 4) 1/2 cup blackberries 1/2 cup blueberries 1/2 cup currants (or another sweet-tart berry that happens to be available) 1/2 cup raspberries 1/2 cup strawberries 1/2 cup Cassis 1 cup milk, skim is even okay! 8 ounces mascarpone cheese 1/3 cup confectioner's sugar 1 T vanilla 1 T cinnamon (optional) Combine the berries and cassis in a bowl and gently mix them with your hands for one minute, making sure to incorporate the cassis with the berries. Let sit or mascerate for 30 minutes. Combine mascarpone, sugar, cinnamon, milk, and vanilla in a mixer and whip until firm, stiff peaks form. Refrigerate for 30 minutes. Either in bowls or glasses, portion the berries and top with the whipped mascarpone. Garnish with mint sprigs and a cinnamon stick.
