In large, non-metal bowl, combine all ingredients. Spoon into 8" square or 9" round porcelain baking dish. Make toping. Mix 1 1/2 cups pancake mix and 2 tablespoons sugar. Cut in butter until mixture is crumbly. Add water. Stir to make soft dough and spoon over fruit mixture, letting fruit show in a 1" border. Sprinkle dough with 2 teaspoons sugar. Place baking dish on foil-lined cookie sheet. Bake until filling is bubbly (45-55 minutes) and top is nicely browned. Serve with ice cream. Enjoy!
