Fresh Corn Salad 8 servings 1/4 cup rice wine or white wine vinegar 2 Tbs. olive oil 1/2 tsp. salt 8 ears (about 3 1/2 lbs.) corn on the cub, husks removed, or 2 pkgs. (16 oz. each) frozen corn kernels, thawed 4 scallions, chopped 1 red pepper, chopped 1/4 cup chopped fresh cilantro In bowl, whisk together vinegar, oil and salt. Using knife, cut kernels off cobs; add to dressing. With back of knife, scrape milk from cobs and add to dressing with remaining ingredients; toss to coat. Work time: 20 min. Total time: 20 min.
