1 Tbs olive oil 12 large stuffing mushrooms, stems removed and chopped 1/2 medium onion chopped 2 garlic cloves minced 6 kalamata olives pitted and chopped 1/4 red pepper flakes 1 tsp oregano 1 cup fresh breads crumbs 1/4 cup crumbled feta cheese juice of one lemon Set mushroom caps aside. Sauté in oil the vegetables and seasonings except the lemon juice , cheese and breadcrumbs. When softened removed from heat and add and mix in the breadcrumbs cheese and lemon juice. Mix well and fill mushroom caps. Place on baking sheet and cook in a preheated 375F oven about 20 minutes or golden brown. Makes 6 appetizer servings or 4 entree servings.
