Toast pita until lightly crisp, about 5 minutes. Combine cheese and milk in food processor bowl until smooth. Transfer to medium bowl. Stir in flour, eggs, feta, peas, onions, dill, mint, lemon zest, salt and pepper. Place pitas in greased 12x8 baking dish. Pour egg mixture over. Let stand 10 minutes. Spread tomato slices over top and bake 35 minutes or until custard is set.
