from NY, USA 4 whole chicken breasts Joan's Plum Honey Sauce: 5 large round ripe plums 1/4 cup honey- more to taste if desired 1 tsp granulated sugar dash salt fresh grated nutmeg to taste 1 Tbs. butter or margarine Cornstarch to thicken ( 1 Tbs mixed with just enough cold water to thin ) Having a lot of fresh ripe leftover plums, I decided to make this sauce instead of a dessert. The sauce was eye appealing plus tasted quite delicious. I think this sauce would also compliment roast duck, turkey or meat chops. Marinade chicken with your favorite homemade or bottled Italian vinaigrette in a plastic bag overnight .. Drain and grill chicken until well done. Meanwhile make the plum sauce. Wash plums, remove pits ( keep skins on ) and coarse chop and place in sauce pot with honey. Bring to a boil and reduce heat. Plums will soften and liquefy. Add sugar, salt, nutmeg to taste and butter. Blend smooth with hand held blender ( or remove mixture and carefully puree in blender or food processor and return to pot). Thicken with some cornstarch. Increase heat to a near boil and whisk sauce until it becomes thick and smooth. To serve chicken: Ladle some plum sauce on a plate. Place on chicken breast and then ladle on some more plum sauce.
