Roasted Chili Peppers Filling: American Processed Cheese ( soft spreadable cheese ) Batter: 4 large eggs separated 1 tsp yellow food color ( optional ) Flour to dredge Remove skins and seeds from roasted peppers. Fill peppers with the cheese. Beat whites stiff and then beat in egg yolks with food color all at once. Dredge filled peppers in the flour and then in the egg mixture. Cook on a hot griddle as one would do for pancakes, turning over when one side is browned. Yield: 6 servings.

Roasted Chili Peppers

Filling:
American
