from US Serves 4 1 bunch of mixed herbs 1 small red onion 2 slices white bread 2 tablespoon lemon juice 2 tablespoon red wine vinegar 4 tablespoon olive oil 1 lb chicken breast fillets salt and pepper to taste 1. Wash the herbs and chop the leaves finely.(parsley,basil,mint,for example ) 2. Chop the onion finely and mix with herbs, lemon juice, ,between two sheets of waxed paper, pound flat lightly. 3. Salt and pepper to taste. 4. On a preheated grill, grill each side for 1 minutes. 5. Arrange on plate and pour the herb mix over all. 6. Serve with a good red wine.
