Two Recipes Pot Stickers, and dipping Sauces: easy to make and wonderfull to eat !!! THE MADARIN SAN FRANSCISCO, CALIFORNIA GRILLED AND STEAMED CHIA TZU [pot stickers] 4 oz prawns or shrimp [ cook-peel-devein-chop] 4 oz lean pork, chop fine 1/3 C Chinese cabbage, chop fine 2 T Whole green onion, chop fine 1 T Fresh Cilantro, chop fine oz=ounce 1 t grated fresh gingerroot T = tablespoon 2 t sesame oil t=teaspoon 2 T soy sauce 1 T chicken broth 21/3 C flour 1/2 t salt 1 C cold water 2 T cooking oil 2 t sesame oil 1 C water ~~~~~~~~~~~~~~~~~~ COMBINE: prawns, pork, cabbage. ADD: onions, cilantro, gingerroot, 2 t sesame oil, and broth. mix well, place in fridge [at least] one hour. Meanwhile, combine flour, salt, and 1 cup water,work by hand till smooth. Dust board with flour, place under bowl, let rest 30 minutes. Divide dough by 3. On well floured board roll each portion to 1/8 thickness. Use 3 " cutter, cut out rounds. roll as needed. Spoon one rounded t filling in each center. Fold rounds in half across filling and pinch edges to seal. Set pinched edge of dumpling upright, and press GENTLY to flatten bottem. Place on cooking sheet, cover with dry towel. In 10" skillet heat 1 each oil and sesame. Add half of the dumplings, do not allow them to touch...Cook one minute till lite brown on bottem, ADD 1/2 C water. Cover and cook 6 minutes, till water evaporated. Use WIDE spatula to remove dumplings, cook other half Keep warm while cooking second batch. Makes 36 dumplings Silkie Palm Springs Ca.
