Huevos en patatas (eggs in potatoes) (spain) from: The Wonderful world of cooking 4 baked potatoes 1 teaspoon salt 1/4 teaspoon black pepper 2 tablespoons butter 1 teaspoon powdered saffron(I use 1/4 -1/2 teaspoon of Ground Turmeric or Bija Supreme Red annotto) 4 eggs watercress Cut top from potatoes. Scoop out pulp and mash. Add salt, pepper,butter, and saffron. Mix stuff potato shells with mixture, forming depression in top of each.
