1 lb parsnips thinly sliced 1 lb apples , peeled, cored and thinly sliced 1 chopped onion butter 1 tsp each ground coriander and cumin 1/2 tsp cardamom seeds 1 lg garlic clove crushed 1 1/2 quarts beer or chicken stock 1/2 cup cream plus 2 Tbs. salt and pepper to taste This is a very tasty and easy soup: Cook parsnips,onions and apples in some hot butter until softened, add spices and cook several more minutes. Pour in stock, ( or beer ) cover and simmer about 1/2 hour or until parsnips are completely tender. Season to taste, puree if desired. Add the cream and reheat gently.
