Italian Love Cake 1 box fudge marble cake mix 2 lbs. ricotta cheese 1 1/3 cups sugar 4 eggs 1 tsp. vanilla 1 box (3 3/4 oz.) instant chocolate pudding 1 cup of milk 1 carton (8 oz.) whipping cream Mix cake as directed on box. Pour into greased and floured 9 x 13 pan. In separate bowl, combine ricotta, sugar, eggs, and vanilla; mix well. Spoon over unbaked cake. Bake at 350*F. for 1 hour. Cool. Mix instant pudding with milk; fold in whipped topping. Spread over cake; refrigerate. This recipe comes from Ann Loftin in September of 1992. It is amazing in that the ricotta filling sinks to the bottom while baking. Lots of ways to reduce fats with light cake mix, part skim ricotta, egg beaters, light cool whip instead of heavy whipping cream.

Italian Love
Cake

1 box
