3 pounds of chicken wings Jerk Sauce: 3 hot red peppers chopped 1 tsp black pepper 2 tsp allspice 2 garlic cloves crushed 1 medium onion chopped 1 Tbs fresh thyme chopped 2 Tbs white vinegar 2 tsp salt 1 Tbs sugar 1/4 cup oil 1/2 cup water Arrange wings in a single layer ( cut in half if desired ) in a large roasting pan. In a food processor combine sauce ingredients and process smooth. Pour over wings to coat evenly. Cover with plastic wrap and chill 2 hours or more. Remove wings from refrigerator 1/2 hour before baking. Preheat oven to 350F . Bake uncovered chicken wings until cooked and golden about 1 hour . Yield: 6 to 8 servings. Serve on platter and garnish as desired.

Sauce:
