Jerry's Leg Of Lamb my friend swears the meat is so tender you can serve it with a spoon! I haven't tried it but here is is for those of you who may be lover's of lamb :) 6 onions quartered 6 large carrots quartered 1 whole head of garlic, peeled and separated into cloves 6 bay leaves cumin seeds ( optional ) 1 bunch fresh thyme or 1 tsp dried 1 large leg of lamb, bone in 2 bottles white or red wine 5 large potatoes quartered 5 large tomatoes seeded and quartered okra (optional) Preheat oven to 425 degrees. In a large roasting pan layer onions, carrots, garlic, bay leaves, thyme. Put salt and peppered lamb on top. Roast uncovered 30 minutes. Add the wine and roast again uncovered until wine boils and continue to roast another 30 minutes. Cover pan and decrease heat to 350 degrees and roast 4 hours. Add potatoes and tomatoes,( some okra ) stirring into vegetable mixture and roast covered an additional hour. Spoon meat onto serving plate with some of the veges and liquids. Party size dish, serve 12 or more.
