from New York, USA 1 large raw sweet potato or yam Olive oil cooking spray salt, pepper, dried maple or honey powder to taste A healthy alternative to deep frying: Peel potato and cut/slice into steak fries pieces. Place pieces in a microsafe round dish or platter. Spray with the olive oil and sprinkle on seasonings to coat. Heat high power in Microwave until soft. My micro is a 700 watt ( old one still going ! ) and it takes 6 to 9 minutes for the potatoes to become softened. Likewise you can do this in the conventional oven at 350F until cooked and soft. Serves 2 to 4. Serve with a honey mustard sauce on the side if you wish. Visit our web page, Home of: Joan's Culinary Baking Adventures & Joan's Quality Cuisine http://www.pipeline.com/~rosskat/
