from US Serves 4-6 4 lbs chicken, skinned and cut into pieces 3 cups water Ground white pepper Salt 1 medium onion, finely chopped 2 tbsp vegetable oil 6 tomatoes, skinned and chopped Pinch garam masala Pinch ground coriander tsp ground black pepper tsp ground nutmeg tsp ground turmeric tsp ground ginger tsp ground cayenne pepper tsp ground cumin 4 garlic cloves, crushed Rub salt, pepper, and garlic into the chicken pieces and roast them in the oven at 350F until golden brown. Cook the onions in the oil over high heat until crisp. Remove the onions and mash them. Add the tomatoes, spices and water. Cook until thick. Add the chicken pieces, garlic, and the mashed onions. Simmer all until cooked through, about 20 minutes. Serve with rice.
