Puree and pour into a large mixing bowl. Chop remaining kiwis to a small dice and add to bowl. Working over the mixing bowl to reserve as much of the juice as possible, carefully remove the mango from its stone. Chop finely and add pulp to the kiwi mixture. Add remaining mint and cilantro, stir well, cover tightly and refrigerate at least two hours before serving. This is also a great garnish for rosted meats!

cilantro, chopped

In a
food processor, combine 3 of the kiwis and half of the mint. Puree and pour into a large mixing bowl.

Chop remaining kiwis to a small dice and add to bowl.

Working over the mixing bowl to
