from NY, US 4 medium zucchini 2 tsp salt 4 cloves garlic 1 green onion 2 Tbs. vegetable oil 1 Tbs. sesame oil 2 1/2 Tbs. roasted sesame seeds Trim zucchini and cut them in half lengthwise. Then cut the halves crosswise into 1/4-inch-thick slices. Put in a bowl and sprinkle with 1 1/2 tsp of the salt. Mix well and let stand for 30-40 minutes. Rinse and drain thoroughly. Pat dry on paper towels. Mince the garlic and slice the green onion into narrow rings. Heat a wok or frying pan over high heat. When hot, pour in the vegetable oil. When oil is heated, add the garlic, stir once or twice, then add the zucchini. Stir-fry for 4-5 minutes, or until the zucchini is crisp-tender. Add the remaining 1/2 tsp salt, the green onion, and the sesame oil. Stir once or twice, then add the sesame seeds. Stir together and serve. This dish may also be served cold as a salad. Serves 6.
