source: Lei Gui 1/4 cup olive oil 1 medium onion diced 3 celery stalks sliced. 2 medium carrots, sliced 1/2 small head of cabbage, shredded 1 medium zucchini, cut into 1/2 inch chunks 1 1/2 pounds ground beef 2 garlic cloves, minced 6 medium potatoes vegetable oil or melted butter 5 cups water 1 cup apple juice 16 oz can green beans 8 oz canned baby lima beans 4 teaspoons salt 1/2 teasppon ground black pepper 1/4 teaspoon ground red cayenne pepper 1/2 teapoon each of oregano and thyme a pinch of nutmeg 1 bay leaf, whole Peel potatoes, shred 1 potato and cut remaining 5 potatoes into 1 inch cubes. Put cubed potatoes into bowl or dish and pour over melted butter or oil and stir about till potatoes are pretty well coated. Then spread on baking sheet in hot oven(400F) and bake till roasted,and almost done. They should be a little browned. In 8 quart Dutch oven or large saucepot over high heat in very hot salad oil, brown slightly the onion, celery, and carrots. With slotted spoon remove vegetables and transfer to bowl that had potaotes and set aside. To same hot oil saute cabbage and zucchini until vegetables are light brown. Remove to bowl and in same oil, cook ground beef,and garlic, stirring frequently until meat is well browned on all sides. To meat add reserved vegetables,potatoes, and remaining ingredients but only half the salt (2 teaspoons). Heat to a boil. Reduce heat to low. Cover and simmer 20 minutes or just until potatoes and carrots are done. Add remaining salt if desired and cook another 2 minutes.Remove bay leaf. Note: Some times when I prepare this, I add a 1/4 cup of catsup or tomato sauce to it instead of apple juice, but it is not necessary. You can also use other vegetables, as long as you brown the fresh ones and drain the canned ones. Including kidney beans or garbanzo beans . Cooked noodles added in the last 10 minutes. Yams instead of potatoes, only I do not roast the yams.Pumpkin should be skinned. It will almost disappear in the liquid and give a nice colour and flavor. Ground Turkey or ground Pork instead of Beef. Almost anything left over can be cut up and added into this soup and for that reason, it seldom tastes the same twice.
