With an avid interest in Guatemalan cooking, I offer this scruptious recipe. TLHOLAC--CARNE DE LOS DIOSES--CARNE MEAT (Meat of the Gods--Maya Meat) 2 cups sour orange juice 2 tbsp salt 1 tsp pepper 5 lbs beef, rump steak or similar cut, in one piece 1/4 c chopped dried beef 1 garlic close, chopped 1/4 c chopped onion 2 slices of bacon, chopped 3 tbsp corn oil 4 bay leaves 1 tsp minced fresh gingerroot 1 chile guaque (guajillo), chopped 1/2 tsp thyme 2 whole cloves 1 c beef broth 2 c water Mix the OJ, salt and pepper together and marinate beef in mixture for 24 hrs. The next day remove beef and reserved marinade. Cut 8 incisions 1 inch deep into the beef. Chope the dried beef, garlic, onion and bacon together, mix well, and fill the incisions with this mixture. Brown beef in oil in lg pot over moderate heat for 10 mins. Add reserved marinade, bay leaves, gingerroot, chile guaque, thyme, cloves, beef broth and water. Bring to boil and then simmer slowly over low heat on top of stove for 4 - 5 hrs. Or bake in 250 degree oven for the same amount of time. Cool and slice beef. Serve cold or at room temperature.
