Hi everyone! Here's a great summer grilled sandwich with some real kick to it! MEXICAN EGG SALAD SANDWICH (from First United Methodist Church-Wyoming) 1/3 cup sour cream 3 tbs canned chopped green chilies 1 tbs lemon juice 1 tsp salt 2 tsp commercial taco sauce 9 hard-cooked eggs, chopped 6 slices tomato 6 slices bread (the recipe calls for whole wheat), toasted 1 cup shredded Cheddar cheese Combine first 5 ingredients in a medium bowl; stir well. Gently stir in chopped eggs. Place 1 tomato slice on each slice of toasted bread. Spread about 1/2 cup egg mixture over each tomato slice. Sprinkle evenly with cheese. Place on an ungreased baking sheet. Broil 5 1/2 inches from heat 3 minutes or til cheese melts. Serve immediately. Enjoy! Julie Michigan, USA
